What they don’t cover is that some people cannot handle all the acidity that comes with coffee. When coffee is cold brewed it produces very little acid. The bitterness of a good smelling black coffee is the acid. When no heat is involved you will get that great smell and get all the flavor. Plus if you have ulcers or other gastro-intestinal problems the low acid content will not affect you as much.
